This is one of my favorite recipes and since it is from my grandmothr, it

is guaranteed delicious! ENJOY!

BUBIE's SALMON LATKES

6-8 servings

This a great "kids can do it" recipe. They love mixing the ingredients. It can get messy so form the latkes and spread the crumbs out on wax paper then cover the latkes in the crumbs.

Ingredients:

2 - 15oz cans of salmon; drain juice
2 eggs
breadcrumbs or corn flake crumbs

Add these spices to taste:

1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp paprika
1/2 tsp celery seed
1/4 tsp pepper
1 tsp Worchestershire sauce

Add a pinch of:

dry mustard
dill
cayenne powder
Alternatives are to use grated onion or for a softer latke, mix in mashed potatoes.

Instructions:

Mix salmon and eggs together in bowl with a handful of crumbs. Add spices and mix well. Form latkes, cover outside with crumbs. Place patties in skillet with hot oil. Cooking over medium heat for 3-4 minutes, turn and cook other side for 3 minutes. Turn down heat and cook longer if a crunchier outside is desired.
